If you're on the latest Mac OS (version 10.15 - Catalina or later) you can create an iTunes backup directly from Finder
If you receive a warning about an encrypted iTunes backup (ChatStorage.sqlite), you need to create a brand-new iTunes backup by not checking the "Encrypt iPhone backup" option, and then extract ChatStorage.sqlite again.
If the "Encrypt iPhone backup" checkbox is greyed out, it means you have a corporate account configured on your iPhone. If so, please remove these accounts (such as Exchange, VPN, etc.).
